Ingredients

Quantity Ingredient
400g large green olives, (or a mixture of green and black)
1 lemon, Pared and julienned zest and juice
2 garlic cloves, very thinly sliced
1/2 teaspoon dried chilli flakes
or 1 fresh chilli, finely chopped
1/2 teaspoon dried rosemary, roughly chopped
or Several sprigs fresh rosemary, roughly chopped
2 tablespoons olive oil

Method

  1. Rinse the olives of any brine or oil, then mix with all the remaining ingredients. Leave to stand for at least an hour before serving, but if you can, do them at least a day in advance.
