Preserved meyer lemons

These are preserved in salt and can be used to garnish meats and add to sauces. Use only the skin when adding them to dishes, discarding the pulp.

If Meyer lemons are unavailable, you can substitute Amalfi.

Ingredients

Quantity Ingredient
500g meyer lemons, cut into quarters
100ml lemon juice
100g sea salt
2 teaspoons caster sugar

Method

  1. Combine all the ingredients in a bowl and toss well to mix. Pack into a large sterilised jar, seal tightly and leave in a cool place for at least a month before using.
