16 elderflower heads
1 litre cider vinegar

Method

  1. Very gently wash and thoroughly dry the heads of elderflower. Pack loosely into sterilised jars and top up with cider vinegar, making sure the elderflowers are completely covered. Seal the jars and leave in a cool dark place for 12 months.
