I’ve included this recipe in the hope that one day key limes will be available worldwide. In the meantime, use organic limes.

Ingredients

Quantity Ingredient
1/2 quantity Lemon ice box pie, Graham Cracker Crumble
75g unsalted butter, melted
2 limes, grated zest
2 egg yolks
400g can of sweetened condensed milk
120ml key lime juice

Method

  1. Mix the crumble with the melted butter and press it over the base and sides of a 23cm pie plate. Chill until firm.
  2. Beat the lime zest with the egg yolks until thick and fluffy. Gradually beat in the sweetened condensed milk, then continue to beat for 2–3 minutes. Beat in the lime juice. Pour the mixture into the crust and chill thoroughly before serving.
