Otherwise known as ‘Southern nougat’.

Ingredients

Quantity Ingredient
280g caster sugar
270g corn syrup or glucose syrup
4 tablespoons water
1 egg white
1/2 teaspoon vanilla extract
70g broken pecan nuts

Method

  1. Put the sugar, syrup and water in a large, heavy-based pan and stir over a low heat until the sugar has dissolved. Raise the heat and cook, without stirring, until the mixture reaches 125°C on a sugar thermometer.
  2. Meanwhile, beat the egg white in a freestanding electric mixer until it forms stiff peaks. When the sugar syrup reaches the correct temperature, pour it on to the egg white in a thin stream, beating constantly. Add the vanilla and beat on a medium speed until the mixture holds its shape and becomes slightly dull; this will take about 10–15 minutes. Fold in the nuts and drop the mixture from the tip of a buttered tablespoon on to waxed paper. Leave to set, then store in an airtight tin.
