At any kopitiam (coffee house) in Malaysia, instead of the usual pair of salt and pepper shakers, it is quite common instead to find a bottle of chilli sauce and a jar of pickled green chillies on the table. These pickled chillies are actually not hot at all, but have a more sour and sweet flavour from the pickling in vinegar and sugar.

Ingredients

Quantity Ingredient
5 large green chillies
125ml white vinegar
125ml water
2 tablespoons sugar
1 teaspoon salt

Method

  1. Cut the green chillies diagonally into thin strips, then place in an airtight glass jar.
  2. Add the vinegar, water, sugar and salt, put the lid on and shake the jar vigorously until the sugar and salt have dissolved. Place in the refrigerator to pickle for at least 3 days. The pickled chillies keep well in the refrigerator for up to 3 months — if they don’t get eaten before then!
