Juice your own redcurrants, and make sure you put the seeds back into the juice after you’ve measured it. Heat with the juice and sugar, then strain them out after it’s cooled (it adds a slight nuttiness to the finished product). Citric acid will increase the shelf life, but isn’t really necessary if you refrigerate it.

Ingredients

Quantity Ingredient
250ml redcurrant juice
250g sugar
1/2 teaspoon citric acid

Method

  1. Put all the ingredients into a saucepan and mix very well. Bring slowly to a simmer and stir until the sugar is dissolved. Remove from the heat immediately and cool before use.
