Shrubs are old-fashioned cordials where fruit is macerated with vinegar and sugar. The flavour definitely improves after a week or two. They can be stored at room temperature. Feel free to use fruit that is a little past its best or is cosmetically challenged.

Ingredients

Quantity Ingredient
125g chosen fruit, (coarsely chop strawberries, if using)
85ml cider vinegar, (or champagne vinegar)
145g sugar

Method

  1. Wash the fruit and put it in a sterilised jar with the vinegar. Cover and let stand for one day. Add the sugar and cover again. Turn the jar over gently to mix and let it stand for several days, turning once a day, until the fruit starts to look a little pale. Strain through a fine-strainer or muslin and store in another sterilised jar. The flavour will improve over 2 weeks.
