Shrubs are old-fashioned cordials where fruit is macerated with vinegar and sugar. The flavour definitely improves after a week or two. They can be stored at room temperature. Feel free to use fruit that is a little past its best or is cosmetically challenged.

Ingredients

Quantity Ingredient
150g pineapple, peeled, (peeled weight)
75g sugar
50g molasses sugar, (or molasses)
85ml apple cider vinegar

Method

  1. Mix the ingredients together in a sterilised jar and cover. Turn the jar over gently to mix and let stand for one week, turning once a day. Strain through a fine strainer or muslin and store in another sterilised jar. The flavour will improve over 2 weeks.
