Grenadine is a pomegranate cordial that unfortunately is rarely made from pomegranates. Please don’t use cheap grenadine in these recipes, only because it tastes terrible. There are some good brands out there, but it is very easy to make your own. You can use unsweetened pomegranate juice or you can juice your own.

Cut open a pomegranate, scrape all the seeds into a food mill with a medium plate and turn it until all the juice is extracted. If you juice your own, you can put the seeds back into the juice after you’ve measured it and heat them with the juice and sugar, then strain them out after it’s cooled (it adds a slight nuttiness to the finished product). Citric acid will increase the shelf life, but isn’t really necessary if you refrigerate it.

250ml pomegranate juice
250g sugar
1/2 teaspoon citric acid, (optional)

Method

  1. Put all the ingredients into a saucepan and mix very well. Bring slowly to a simmer and stir until the sugar is dissolved. Remove from the heat immediately and cool before use.
