Applejack is not distilled. You just fill a bathtub with apple juice, add a bit of yeast, let it brew for a few weeks and then leave it out in the winter to freeze. The lower the temperature, the more booze in the unfrozen part. Ironically, bathtub gin wasn’t made in bathtubs, but the bottles it was made in were so tall they needed to be filled up in the bathtub.

‘Baldy Jack Rose’ was a double-crossing gambler and Jewish underworld figure in New York who quite probably got away with murder by selling his police captain crime boss up the river. The Jack Rose wasn’t named after him, but his story is a cool one.
