Ingredients

Quantity Ingredient
45ml scotch whisky
30ml white rum
15g good-quality quince jelly
90ml brut champagne, (or dry sparkling wine)
a piece poached quince, to garnish
or a twist orange peel, to garnish

Method

  1. Put the first three ingredients into a shaker, add plenty of cubed ice and shake hard until the shaker is very frosty. Fill a glass halfway with crushed ice and fine-strain the drink into it. Top with Champagne and float the garnish on top.

Note

  • Tastes sweet and a little strong.

Note

  • This is best served in a collins glass.
