During prohibition, American drinkers and bartenders alike flocked to Cuba in their thousands to drink and make drinks legally. There they discovered exotic cocktails made with the local rum like the daiquiri and the mojito. The famously sloshed Ernest Hemingway, a regular visitor to Cuba, managed to consume a record sixteen of his special daiquiris called the Papa doble in one night. That’s just shy of three whole bottles of rum! Back in the speakeasies of the States, the sugar in the daiquiri was replaced with grenadine and the bacardi cocktail was born.

A collection of rum-based cocktails.
