Soup is very important in Polish cuisine. Poles tend not to speak of an entrée and a main, rather they talk about a soup and a main; often the soup will be made and then an element of it reserved and used as part of the main dish. Broth, or rosół, is the basis for many soups. Often the meat used to make the broth will be utilised in the main course, either as a whole piece or shredded as a filling for uszka (which are often served with borsch) or pierogi.
