Springtime in Poland brings a burst of fresh fruits and vegetables, such as radishes, kohlrabi and cucumber. True to form the Poles do tend to make them into rather decadent salads, which nevertheless reflect the summery season. On 35°C humid Melbourne summer days, the office above Borsch used to get to about 50°C before we put in air conditioning. When I had to go up and work on menus, a saving grace was taking some Russian salad and pickles and maybe some rollmops, all fresh from the cool, cool fridge.

The other half of these side dishes are rather more wintery, utilising longer lasting or preserved vegetables and grains.
