This is Andrzej’s own recipe. It takes its sweet time and the end result is delicious and very natural. To make this vodka right, you have to go to the market and select your own pineapples. When selecting a pineapple, pick it up and smell it, if it doesn’t smell like a pineapple, put it back. Now smell the ends, if it smells mouldy, put it back. It is often hard to find good pineapples away from the tropics so sometimes you have to compromise, a little mould with a lot of flavour might be okay — use your judgement.

Ingredients

Quantity Ingredient
1 large pineapple, peeled and thinly sliced
220g white sugar
500ml clear vodka, such as luksusowa
250ml spirytus

Method

  1. Place an even layer of pineapple in the base of a large, sterilised container. Sprinkle over a thin layer of sugar to coat. Repeat with the remaining pineapple and sugar to create more layers until they are all used. Cover and refrigerate for 2 weeks.
  2. Pour the vodka and Spirytus over the pineapple, re-cover, and refrigerate for a further 2 weeks. Stir the mixture well and strain through a fine sieve, squeezing the pineapple to extract as much liquid as you can.
