Goulash, as we know it in English, has many forms. It is made in Poland, Hungary, the Czech Republic, Slovakia, in fact all throughout Europe. It can be a soup or a stew and usually is based on beef, onions and paprika. I offer two versions in this book. This one is the old standby at Borsch — it contains the rather unusual additions of coriander and green peppercorns. The result is a little soupy, though we still serve it as a stew.

Ingredients

1 garlic clove
1 1/2 tablespoons coriander leaves
1 teaspoon green peppercorns
1 teaspoon salt
1 tablespoon vegetable oil
600g gravy beef, diced
1 onion, finely diced
1 teaspoon potato starch, cornflour or arrowroot
sweet paprika, for garnish

Method

  1. Use a mortar and pestle to grind the garlic, coriander, peppercorns and salt into a paste.
  2. Heat the oil in a heavy-based casserole dish over high heat. Brown the meat evenly all over for about 5 minutes, turning a few times. Remove to a plate.
  3. Reduce the heat to medium, add the onion to the dish and cook, stirring frequently, until it is softened, but not browned. Add the peppercorn paste and cook, stirring, for a further few minutes, then add enough water to just cover the meat. Bring to a simmer, then reduce the heat to low, cover, and cook for 2½ hours, or until the meat is tender. You will need to stir the meat occasionally to prevent it sticking to the base of the dish.
  4. When the meat is tender, mix the potato starch with 1 tablespoon of water until it is smooth. Pour into the goulash and stir to thicken. Sprinkle with a little sweet paprika, to serve.
  5. At Borsch, we also serve goulash with a red capsicum relish (the kind where the peppers are cut into little dice) which is available prepared from Continental grocery stores and is probably labelled ‘paprika relish’.
