This pepper sauce goes really well with red meat.

Ingredients

Quantity Ingredient
50g salted butter
1 onion, finely diced
100ml brandy
1 quantity see method for ingredients
1 tablespoon cracked white or green peppercorns

Method

  1. Melt the butter in a saucepan until foaming. Add the diced onions and sauté for 10 minutes, until soft and translucent. Pour in the brandy, bring to the boil, then simmer until almost all of the liquid has evaporated. Stir in the red wine jus and simmer for 2–3 minutes. Finally, add the peppercorns and keep warm until required.
