This guacamole is out of this world. It’s a real change from your average run-of-the-mill tomato-coriander-lime combo.

Ingredients

Quantity Ingredient
3 ripe avocados
2 tablespoons finely chopped onion
1 jalapeno chilli, finely chopped
sea salt, to taste
1 ripe peach, peeled and diced
90g seedless grapes
1 lime, juiced, or to taste
1 pomegranate, seeds

Method

  1. Remove the stones from the avocados, scoop the flesh into a bowl and mash roughly with the back of a fork.
  2. In a serving bowl, mix the chopped onion, chilli and salt together to a rough paste. Stir in the mashed avocado, peach, grapes, lime juice and half the pomegranate seeds. Mix well and serve sprinkled with the remaining pomegranate seeds.
