This sauce is superb served with barbecued meats.

Ingredients

Quantity Ingredient
1/2-1 onion, finely diced
2 tablespoons apple-cider vinegar
120g blue cheese
125g sour cream
125ml buttermilk
125g japanese mayonnaise
1 tablespoon chopped tarragon
salt
freshly ground black pepper

Method

  1. In a small bowl, steep the onion in the vinegar for 20 minutes. Drain the onions and place them in a food processor with the remaining ingredients. Blitz and season to taste. If possible, prepare this a day in advance, as the flavours really develop overnight.
