You can’t have Lebanese food without tabouleh. It’s the heart and soul of the meal. Serve the fresh flavours of flat-leaf parsley, lemon, burghul (bulgur wheat) and chopped tomato with lovely flat breads, hummus and grilled marinated meats. Talk about healthy and delicious

Ingredients

Quantity Ingredient
1 cup soaked fine burghul
3 garlic cloves, chopped
1 large bunch flat-leaf parsley, washed and roughly chopped
250g tomatoes, halved, seeded and chopped
1 large lemon, juiced
salt
freshly ground black pepper

Method

  1. Wash and prepare the burghul as recommended on the packet. (Generally, place the burghul in a bowl, cover with cold water and set aside for 1 hour to soak.)
  2. Mix the garlic and parsley in a bowl, then add the chopped tomatoes.
  3. Drain and add the burghul and the lemon juice, and combine. Season with salt and pepper.
