This is not so much a recipe as a memory.

Ingredients

1 whole fish, gutted, scales left on
seaweed

Method

  1. Build a re and allow it to burn down to coals.
  2. Stuff the sh with fresh seaweed — don’t use old seaweed that’s been washed up on the beach for a week!
  3. Make a bed of even-sized, largish coals so the sh is kept out of the ash and dirt. Place the sh on top of the coals and cook for 6–8 minutes.
  4. Using a stick, turn the sh over and cook for another 5–6 minutes.
  5. The hard part is getting the sh off the coals and onto a at stone. Use the seaweed to cover the stone like a plate. Pick off the blackened skin and get stuck in.
