This salad is so simple and tastes great. I put chilli in it but it works just as well without it. Use a good boiling potato that will fluff a little, like a chat or desiree, and choose ones that are roughly the same size.

Ingredients

Quantity Ingredient
600g potatoes, peeled
salt
3 garlic cloves, chopped
1 birdseye chilli, chopped
150ml extra-virgin olive oil
1 lemon, juiced
handful chopped flat-leaf parsley leaves
freshly ground black pepper

Method

  1. Boil the potatoes in salted water until tender. Drain and allow to steam dry.
  2. Add the garlic and chilli to the potatoes, then toss with the olive oil. Allow the potatoes to break up a little and roughen up.
  3. Add the lemon juice and parsley, then season with salt and pepper and serve.
