I love this dish! The sweet saltiness of the marinade combines perfectly with the buttery texture of the Wagyu beef, which just melts in the mouth.
I have served this dish on its own as a canapé, and as a starter, accompanied by Spinach and Avocado Salad with Sesame Dressing. The inclusion of Wagyu beef makes this recipe a little out of reach for everyday occasions, but sometimes you can find it at a good price. If not, just look for some good grain-fed fillet. Note that if you’re using the Wagyu, go for the middle cut so it has an even thickness. You’ll find crispy shallots at Asian food stores and shizu cress at good greengrocers.
You probably won’t use all of the marinade, but it will keep for up to 1 month in the refrigerator if stored in an airtight container, and it also freezes really well.
