The sweetness of the onions and peppers complement the creamy hummus perfectly. For speed, use leftover onions from your last veggie roast.

Ingredients

Quantity Ingredient
1/4 red onion
drizzle olive oil
2 slices bread of choice
2 heaped tablespoon hummus
handful rocket
2 large handfuls jarred peppers
1/2 tablespoon chopped parsley
1 tablespoon sunflower seeds

Method

  1. Preheat the oven to 220°C. Coat the onion in the oil and roast for 5 minutes until caramelised.
  2. To pack, fill a large lunch box with bread wrapped in cling film, a small container filled with hummus, the rocket, red peppers, red onion, parsley and sunflower seeds sealed in separate small bags.
  3. To assemble, spread the hummus over the bread, top with the rocket, peppers, onion, parsley and seeds.
