Courgette ribbons with pea & mint salad

The ultimate speedy salad, making the most of fresh and accessible ingredients. Recommended on the hottest of summer days.

Ingredients

Quantity Ingredient
handful walnuts, toasted
1 courgette, peeled into ribbons
30g rocket
1 spring onion, sliced
50g fresh shelled peas
1 heaped tablespoon roughly chopped mint leaves
30g feta

For the dressing

Quantity Ingredient
1 lemon, juiced
1/2 teaspoon chilli flakes
2 tablespoons olive oil
salt
freshly ground black pepper

Method

  1. In a small dry frying pan, over a low heat, toast the walnuts until aromatic, pour into a small bowl to cool. Toss together the courgette ribbons, rocket, spring onion, peas, mint leaves, walnuts and feta cheese. Place in a lunch box, and store in the fridge until needed.
  2. To make the dressing, combine the lemon juice, chilli flakes, oil and seasoning in a small screw-top lidded jar and shake to combine.
  3. To serve, pour the dressing over the salad, and toss to combine.
