The avocado is always such a reliable option for lunch. Topped with a hint of dukkah and crisp radish to elevate this favourite.

Ingredients

Quantity Ingredient
2 slices bread of choice
1 ripe avocado, peeled and stoned
1 tablespoon dukkah
3 radishes, finely sliced
1/2 tablespoon roughly chopped mint leaves
small handful feta
1/2 lemon, juiced

Method

  1. To pack, fill a large lunch box with bread wrapped in cling film, avocado, dukkah, radishes, mint and feta sealed in separate small bags, and half a lemon.
  2. To assemble, spread the avocado over the bread, sprinkle over the dukkah. Arrange the radishes, mint and cheese on top and finish with a squeeze of lemon juice.
