This recipe makes enough flavoured vodka for two small bottles. Find attractive, swing-top bottles online, and personalise them with a favourite cocktail suggestion on a hand-written label.

Ingredients

Quantity Ingredient
75g caster sugar
1/2 vanilla pod
5 tablespoons water
1 pomegranate, seeds removed
500ml vodka

Method

  1. Heat the sugar, vanilla and water in a saucepan. Bring to the boil and simmer for 4–5 minutes, or until the sugar has dissolved. Set the mixture aside to cool.
  2. Meanwhile, remove the seeds from the pomegranate: cut the fruit in half, hold over a bowl and give it a satisfying bash with the back of a wooden spoon. Then, place the cooled syrup, vanilla pod, pomegranate and vodka in a large, clean sterilised jar with a lid, and shake to combine the ingredients. Place the jar somewhere cool and dark for a week, shaking occasionally to let the flavours infuse.
  3. When the week is up, pour the flavoured vodka through a sieve. Divide the vodka between two clean 250 ml bottles. Add some fresh pomegranate seeds to each bottle and seal. Store somewhere cool and dark for up to a month.
