How to make fondant confetti sprinkles

This is an easy way to make your own sprinkles, and you can choose exactly the colour palette you want. Colour fondant icing in whatever shades you like. I started with a ball of red and a ball of yellow fondant, then I mixed the colours to create 2 shades of orange for a graduated palette.

Method

  1. Dust the work surface with icing sugar. Shape the fondant icing into little balls, all the same size.
  2. Roll out the fondant balls side-by-side to a thickness of 2–3 mm to ensure that all of the sprinkles are the same size.
  3. Cut out confetti shapes using an icing tip (I used an 8 mm one). This is easier to do if you leave the rolled-out fondant to dry out for a few moments and dip your icing tip into some extra icing sugar first.
  4. Set the fondant confetti on a surface dusted with icing sugar or some baking parchment for a few hours or overnight to harden. The confetti can be made ahead and stored in a sealed container at room temperature for several weeks.

Tip

  • Knead the fondant briefly to make it smooth before you roll it out. Fondant icing dries out so keep it covered with cling film as much as possible until you’re ready to use it.
