Crystallised rosemary is really simple to make, and makes for a pretty decoration for rosemary-flavoured cakes

Ingredients

Quantity Ingredient
Apple, parsnip and rosemary syrup cake, (just the rosemary syrup)

Method

  1. Follow the recipe for Rosemary Syrup. You will also need 50 g caster (superfine) sugar. Line a baking tray or plate with baking parchment. Dip the rosemary sprigs in the syrup and sprinkle all over with the sugar. Set aside to dry on the lined baking tray or plate for several hours or overnight.
