How to fill cakes with jams or curds

Sometimes it’s nice to see a bit of jam or curd oozing generously out of the sides of layer cakes, but if you’re covering the sides of your cake in buttercream or ganache it’s a good idea to add a ‘dam’ to stop the runnier filling from leaking out.

Method

  1. Fill a piping bag fitted with a large plain icing tip with buttercream or ganache, and pipe a line around the outside of the cake layer.
  2. Fill the layer with a thin layer of your jam or curd.
  3. Spread out the jam or curd to meet the piped line with the back of a spoon.
  4. Place the next layer on top and press down gently to make sure that the filling is sealed in all the way round. Repeat these steps for the remaining layers.
