Watercress and fermented tofu stir-fry

Ingredients

Quantity Ingredient
1 tablespoon vegetable oil
2 teaspoons ginger, finely chopped
1 bunch watercress, washed, ends trimmed and cut into 6 cm lengths
3 pieces red fermented tofu, mashed with 1 tablespoon of the tofu liquid
1 tablespoon tofu liquid
1 teaspoon sesame oil

Method

  1. Heat the vegetable oil in a wok over a medium–high heat. Add the ginger and stir-fry for 30 seconds, or until fragrant, then add the watercress and stir-fry for 2–3 minutes, or until the cress has wilted. Add the mashed fermented tofu, tofu liquid and sesame oil and toss to combine well. Serve immediately.
