Braised broad beans in their pods

Ingredients

Quantity Ingredient
100ml olive oil
100g fatty pancetta, cut into strips
2 onions, finely sliced
1kg baby broad beans, with the bean just formed inside
200ml water
20 mint leaves, chopped
100g hot pork sausage, cut into cubes
salt
pepper

Method

  1. Put the olive oil in a pan and fry the pancetta with the onions. Let the onions become soft, about 5 minutes, and then add the broad beans and the water (add more if required). Cook for 25 minutes, then add the mint and the sausage cubes. Cook for a further 10 minutes, then add salt and pepper to taste.
  2. Serve as a first course.
