Beans braised in white wine

Ingredients

Quantity Ingredient
200g dried borlotti beans, soaked for 12 hours
2 bay leaves
60g butter
30g speck, finely chopped
125ml pinot grigio or equivalent dry white wine
salt
pepper

Method

  1. Discard the soaking water and boil the beans in fresh water with the bay leaves for at least 2 hours, or until soft. In another pan, melt the butter and fry the speck until brown, then add the drained beans and stir for a few minutes. Add the wine and let it evaporate. Adjust with salt and pepper to taste.
