Ingredients

Quantity Ingredient
2 short cucumbers, peeled, de-seeded and cut into batons of 8–10cm long
1 tablespoon dill, finely chopped
2 tablespoons extra virgin olive oil
1 tablespoon caster sugar
1 tablespoon white wine vinegar
salt
pepper

Method

  1. Put all the ingredients into a ceramic bowl and leave to marinate for 1 hour in the fridge. Stir from time to time to coat every piece and then serve.
