Ingredients

2 raw or cooked cotechino sausages, about 250g each
6 tablespoons olive oil
1 garlic clove, finely sliced
500g fresh ceps, cleaned and sliced
1 tablespoon flat-leaf parsley, chopped
1 tablespoon basil, chopped
1 boned breast or loin of veal joint, about 2.2kg
salt
pepper
40g butter
150ml Chicken stock
200ml white wine

Method

  1. Put the cotechino sausages into a saucepan and cover with cold water. Bring to the boil, then lower the heat and simmer, allowing 3 hours if raw, 20 minutes if pre-cooked. Drain and cool slightly.
  2. Heat 4 tbsp of the olive oil in a large sauté pan with the garlic. Add the ceps and sauté until softened and the juices have evaporated. Remove from the heat and mix in the herbs. Leave to cool for 10 minutes or so.
  3. Preheat the oven to 180°C. Using a sharp knife, cut a deep pocket in the veal from one side, between the layers of fat and meat. Season the inside of the pocket with salt and pepper, then stuff with the cotechino. Put the mushrooms into the pocket too, pushing them all around the sausage. Sew up the opening with kitchen string.
  4. Heat the remaining olive oil and the butter in a flameproof casserole dish and brown the veal on all sides. Add the stock and wine, cover and braise in the oven for 1½ hours. Skim off the fat from the surface of the liquor. Carve the veal into slices and serve with the liquor and potato purée or polenta.
