Ingredients

Quantity Ingredient
4 pike steaks, about 200g each
olive oil
2 garlic cloves, very finely chopped
3 tablespoons parsley, very finely chopped
salt
pepper
1 lemon, cut into quarters

Method

  1. Trim the pike steaks. Pour enough olive oil to cover the steaks into a shallow pan just big enough to hold them. Bring the oil up to a simmering point, then add the garlic and parsley. Make sure that the oil is not too hot, then add the pike steaks. Cook over a low heat for 15 minutes, or until you see little white balls forming in the oil. This is the fish protein coagulating. The oil should not bubble at all.
  2. Drain the fish, season to taste, and serve with a spoonful of the ‘green’ oil, the lemon quarters and some boiled potatoes.
