Strawberry pasta cooked in milk, with strawberry sauce

Fregola is a lovely Sardinian pasta in the shape of a pellet. It can be cooked rather like rice, and this, I suppose, is a sort of Italian pasta (rice) pudding. It is cooked with milk, flavoured with honey (orange-blossom or chestnut blossom are the most delicious) and served with a strawberry sauce.

Ingredients

200g dried fregola pasta
salt
1 litre full-fat milk
3 tablespoons clear orange-blossom honey

Sauce

300g ripe strawberries
60g caster sugar
1/2 lemon, juiced

Method

  1. Cook the pasta in plenty of boiling, slightly salted water for 10 minutes, then drain and keep aside. Add the milk to the saucepan, bring to the boil, then add the pasta and a pinch of salt. Cook the pasta until very soft and creamy, about 30 minutes. Stir in the honey and set aside to cool.
  2. Cut the strawberries and put them in a small saucepan with the sugar and lemon juice. Over a gentle heat, let it all dissolve together to a thick sauce, helping the strawberries along occasionally with a fork. Let the sauce cool.
  3. Eat the pasta and sauce together.

Alternatives

  • Try substituting the strawberries with raspberries, or even blackberries later in the year, for a different but still delicious flavour. And in place of the fregola you could use orzo instead, a pasta which already looks like rice!
