On the whole they are easy-to-prepare dishes, which can be enjoyed as a light meal by themselves, or as part of a meal. A couple of recipes served together would make a good lunch or supper, or you could offer a selection as a buffet, say, or as antipasti in the Italian style. The selection of light dishes also includes salads, which are increasingly in demand for their ease of preparation and health aspects. The essence of most salads is rawness – and indeed some fungi can be eaten and enjoyed raw – but you will find an interesting selection here, both raw and cooked. By increasing the quantities of many of these dishes, they can also be eaten as a main course – especially useful for vegetarians. And of course you can increase or decrease the quantity of any of the ingredients to suit your palate. I am not offended by such a thought, and indeed, let me know about any major improvements!
