Ingredients

Quantity Ingredient
300ml full-fat milk
200ml pure cream
2 tablespoons cornflour
3 tablespoons caster sugar
2 egg yolks
1/2 vanilla pod, split lengthwise

Method

  1. Measure out the milk, cream, cornflour, sugar, and egg yolks in a small saucepan. Scrape the vanilla seeds into the pan and add the pod as well. Slowly simmer over low heat without boiling, and stir continuously until the custard thickens. Remove from the heat, strain quickly and let cool. The custard will thicken even more when it cools. Delicious as a filling in pastries and other baked goods.
