Tomato salad with basil

This is a wonderful tomato salad. Adding a touch of both salt and sugar can make even the most mundane tomatoes quite aromatic.

Ingredients

Quantity Ingredient
1 garlic clove, peeled and halved
500g sweet, ripe mixed tomatoes
a small pinch caster sugar
1/2 teaspoon sea salt flakes
freshly ground black pepper
3 tablespoons olive oil
1 tablespoon red wine vinegar
croutons, (optional)
15-20 fresh basil leaves

Method

  1. Rub the inside of a salad bowl with the halved garlic clove. This provides a perfect hint of garlic, without being too intense.
  2. Rinse the tomatoes, then cut them into chunks and place them in the bowl. Sprinkle with the sugar, sea salt and black pepper. Combine the olive oil and vinegar and drizzle it on top of the tomatoes. Toss together gently and let stand for at least 15 minutes, then add the croutons, if using. Top the salad with some torn basil leaves.
