Ingredients

Quantity Ingredient
3 medium ripe and juicy tomatoes
1 small garlic clove, finely chopped
1 tablespoon fresh lemon juice
1/2 teaspoon honey
1-2 tablespoons olive oil
sea salt flakes and freshly ground black pepper

Method

  1. Cut a small cross in the base of each tomato. Add the tomatoes to a pan of boiling water and simmer for 1 minute; transfer to a bowl of cold water. Drain and peel, then cut the tomatoes into wedges. Core and discard the seeds. Put the tomatoes and remaining ingredients in a blender and mix until smooth. Season to taste.
