Alex’s tomato chicken with basil

This quick and easy chicken turns out much nicer than you might expect just from reading the recipe. It’s simple everyday cooking!

Ingredients

Quantity Ingredient
5 medium-sized, ripe tomatoes
2 large garlic cloves
1 tablespoon olive oil
1 tablespoon butter
2 chicken breast fillets
sea salt and freshly ground black pepper
plenty fresh basil leaves

Method

  1. Start by halving the tomatoes, then core and cut each tomato half into about 6 pieces. Peel and finely chop the garlic. Set the tomatoes and garlic aside.
  2. Heat a frying pan (one with a lid) and add the olive oil and then a little knob of butter. Add the chicken to the pan and brown the chicken over fairly high heat for about 3 minutes on each side. Season with salt and pepper.
  3. Add the garlic and let it fry gently alongside the chicken for no more than 30 seconds. Then add the tomato pieces and let everything simmer; they will soon turn soft and pulpy. Cover and cook for 5 minutes. Remove the lid and turn the chicken over, then cook for another 12 minutes uncovered. Make sure the chicken is cooked through.
  4. Sprinkle generously with finely chopped basil and serve straight out of the frying pan, ideally with some oven-roasted potato wedges and a green salad, or simply with plain pasta.
