Scones the way we like them

Our favourite scones are made with yoghurt, and are quickly and easily thrown together in a food processor.

Ingredients

Quantity Ingredient
375g plain flour
1/4 teaspoon salt
2 teaspoons baking powder
200g thick greek yoghurt
100ml water

Method

  1. Preheat the oven to 250°C. Line a baking tray with non-stick baking paper.
  2. Combine the flour, salt and baking powder in a bowl or food processor. Add the yoghurt and water, and quickly work into a dough.
  3. Turn out the dough onto a lightly floured work surface and divide into 4-5 pieces. Use floured hands to shape each piece into a fairly round scone, and place them on the tray. Flatten the scones slightly with your hand, then score each one crosswise with a blunt, floured knife to give 4 scones per piece.
  4. Bake in the oven for 10-12 minutes. Break the scones apart and serve hot from the oven.
