A cool, refreshing lemon iced tea, sweetened with a bit of sugar syrup. Keep a chilled jug in the fridge in the summertime.

Sugar syrup

Ingredients

Quantity Ingredient
200ml water
200g caster sugar

Tea

Quantity Ingredient
1 litre fairly strong, cold brewed tea such as earl grey or earl green
sugar syrup, to taste
1 washed organic lemon, thinly sliced
plenty of ice

Method

  1. Start by making a sugar syrup by bringing the water and sugar to the boil. Allow it to boil gently, uncovered, for about 5 minutes, or until the mixture becomes transparent. Let cool. Pour the sugar syrup into a glass jug, cover and store in the fridge until you are ready to make the iced tea.
  2. Brew 1 litre of black (tastiest in our opinion) or green tea, and allow to cool. Sweeten with the sugar syrup according to taste. Stir, add thin lemon slices and serve in tall glasses with plenty of ice.
