Delicious pears in a creamy caramel sauce. Choose nice firm pears and simmer them very slowly and gently so that they don’t lose their shape.

Ingredients

Quantity Ingredient
4 firm and flavourful pears
1/2 vanilla pod
2 tablespoons butter
100g caster sugar
100ml pure cream
fresh mint leaves, for garnish

Method

  1. Peel and halve the pears, core them with a small sharp knife, and cut each pear half into 3 wedges. Split the vanilla pod and scrape out the seeds.
  2. Melt the butter in a frying pan, then add the pears, vanilla pod and vanilla seeds. Sprinkle with the sugar. Let the pears colour nicely and then lower the heat.
  3. Cover, and cook or simmer the mixture over low heat until the pears are almost soft. This takes about 5-25 minutes, depending on the type of pear. Then pour in the cream alongside the fruit and cook for another 5-6 minutes, now uncovered, to make the delectable sauce.
  4. Serve the pears either warm or slightly cooled, with a scoop of vanilla ice cream and garnished with mint leaves.

Note

  • With pears, the cooking time always varies quite a lot, depending on the variety.
