Although this cake is frequently made with apples, we find it even more irresistible with pears. It can also be made in small individual dishes, which requires less time in the oven.

Ingredients

Quantity Ingredient
100g almonds or ground almonds
2 tablespoons soft butter, for the dish
4 large, firm pears
100g butter, at room temperature
100g caster sugar
2 medium eggs
2 tablespoons fresh lemon juice

Method

  1. Start by grinding the almonds (no need to blanch them first), or use store-bought ground almonds. Grease an ovenproof dish with a bit of soft butter, and preheat the oven to 200°C. Peel and core the pears, cut them into thick wedges and arrange them in a single layer in the dish.
  2. Bake the pears in the oven for 10-20 minutes, or until almost soft. Meanwhile, prepare the almond mixture.
  3. Cream the butter and sugar, and stir in the ground almonds. Add the eggs one at a time, stirring thoroughly after each egg. Lastly, add the lemon juice.
  4. Take the dish out of the oven and spread the almond mixture over the pear wedges. Return to the oven and bake for about 15 minutes more.
  5. Serve the pear cake warm or slightly cooled, on its own, with pouring (single) cream or vanilla ice cream.
