Spicy almonds with garlic

Ingredients

Quantity Ingredient
1 tablespoon fresh rosemary, chopped, (optional)
200g almonds, blanched and peeled
1 tablespoon olive oil
1 teaspoon dried rosemary
1/2 teaspoon cayenne pepper
1 teaspoon crumbled sea salt
1 teaspoon brown sugar or raw sugar
1 garlic clove, crushed

Method

  1. Preheat the oven to 200°C. Finely chop the fresh rosemary leaves, if using. Mix the almonds and olive oil in a small bowl. Add all the other ingredients and stir well, making sure to coat the almonds with the spices.
  2. Spread the almonds out on a baking tray lined with non-stick baking paper, and toast them in the oven for 10-12 minutes, or until golden brown. Tip the almonds onto a plate and leave to cool.
