These crispy puff pastries are topped with cream cheese, apricot jam and almond paste.

Ingredients

Quantity Ingredient
200g almond paste or marzipan
100g philadelphia cream cheese, at room temperature
60g sifted icing sugar, plus extra for dusting
1/2 teaspoon pure vanilla extract
1 lightly beaten egg
375g puff pastry
100ml apricot jam
50g flaked almonds

Method

  1. Coarsely grate the almond paste or marzipan. Mix the almond paste with the cream cheese, icing sugar, vanilla and half the egg, either by hand or with a stick blender. Set aside.
  2. Preheat the oven to 200°C. Line a baking tray with non-stick baking paper. Roll out the puff pastry until 3 mm thick. Cut the pastry into two rectangles, about 25 x 15 cm, and transfer them to the baking tray. Fold up the edges of the long sides of each pastry sheet. Spread a thin layer of apricot jam over the pastry, then spread a layer of the almond and cheese mixture on top. To finish, brush the pastry edges with the rest of the lightly beaten egg, and sprinkle the flaked almonds over the filling. Bake for 20-25 minutes, or until nicely coloured. Cool before cutting into pieces and dusting with sifted icing sugar.
