This comforting cannelloni dish is filled with ricotta, lemon, walnuts and spinach.

Ingredients

Quantity Ingredient
A simple tomato sauce
250g baby english spinach
250g ricotta cheese
1 tablespoon lemon zest, finely grated
2 tablespoons olive oil
50g walnuts, chopped
50g parmesan cheese, grated
1 garlic clove, crushed
300g fresh lasagne sheets
25g butter, plus extra for greasing the dish
salt
freshly ground black pepper

Method

  1. First make the tomato sauce and set it aside. Rinse and trim the spinach leaves. Bring lightly salted water to the boil in a saucepan, add the spinach, cover and cook for just 1 minute. Tip the spinach into a colander and rinse with cold water. Drain well, squeeze to remove any excess water and place the spinach in a food processor. Add the ricotta, lemon zest, olive oil, salt, pepper, walnuts and approximately half the parmesan cheese. Pulse, then add the crushed garlic and pulse once more.
  2. Preheat the oven to 200°C. Grease an ovenproof dish with soft butter. Pour in half of the tomato sauce. Place the lasagne sheets on a lightly floured surface and place a line of 2-3 tablespoons of the ricotta filling in the middle of each sheet. Moisten the edges with water and then roll or fold together. Place the rolls, seam-side down, on top of the tomato sauce, preferably in a single layer. Cover with the rest of the sauce, the remaining parmesan and dot with the butter. Bake for about 25 minutes. Serve with a green salad.
